Kashmiri food is not about Wazwan only. I would like to introduce you to Kashmiri Pandit cuisine called ‘Wurbal’.
In traditional homes in Kashmir, Kitchen will have earthen Hearth called ‘Daan’ where wood or coal was used as a fuel. ‘Wur’ is actually a large sized Daan which can cater to large scale cooking required for large gatherings like Weddings etc. ‘Bal’ means Place. Wurbal means the cooking place generally used in marriages and large gatherings.
Kashmiri cuisine is heavy on spices. Onions and tomatoes are not used to make gravy. Instead, curd is used generously in traditional cuisines.
