Erin began her career path aiming to become a lawyer, but a job at a retirement community shifted her focus. Inspired to help older adults, she pursued a degree in gerontology instead. Determined to make a difference, she founded Conscious Aging Solutions to help older adults navigate health and social systems to age successfully. Her interest in food systems deepened, and she became certified in Regenerative Soil Advocacy. During the pandemic, Erin witnessed how supply chain disruptions worsened existing food access problems, contributing to poor health outcomes and high mortality ratesâespecially among those with chronic illnesses. In 2021, Erin co-founded FreshRx Oklahoma, a prescription produce program designed to address these issues. Its success catapulted Erin onto the national stage, where she now advocates for food as medicine to promote community health, reduce food insecurity, support environmental sustainability, revitalize agriculture, and lower healthcare costs.
