Today was round 1 of Thanksgiving food cooking.

Here is the menu. It's mushroom intensive this year. (and almost everything is plant-based and mostly organic): 😄

▪️Roasted butternut squash, cauliflower, sweet peppers, onion, and garlic soup
▪️First main: Roasted butternut squash and triple mushroom Wellington
▪️Second main: For me, roasted spaghetti squash carbonara. Turkey for the meat eaters
▪️Stuffing with chestnuts, mushrooms, walnuts, apple chunks, cranberry, and celery.
▪️Buttery garlic mashed potatoes
▪️Mushroom gravy
▪️Green beans with shallots and crispty onions
▪️Persimmon, pomegranate seed, and mint relish
▪️Biscuits (from a can because I'm not making everything from scratch) 😂
▪️Dessert: Vegan pumpkin pie and pecan pie (not vegan for others.)

Vegan Meal Idea: Teriyaki Chicken With Veggie Stir Fry. 🍽️

For dinner, made a vegan Teriyaki chicken with cremini mushrooms and onions coupled with a green bean, kale, carrot and shiitake mushroom stir fry and steamed rice. Easy to make and very delicious!

Used Daring foods for the plant-based chicken.

Meal Idea: Vegan Black Eyed Peas With Coconut Rice and Power Greens.

Starting off the new year with a healthy and delicious meal!

I cooked dried black eyed peas (used Rancho Gordo brand) with onion, garlic, celery and carrots then sautéed the cooked peas with fried tempe bacon, and chopped up shishito and poblano peppers.

The rice was cooked with coconut milk, powdered turmeric and a couple pinches of salt and sugar.

For the greens, I sautéed some chopped up onions in a little avocado oil and then tossed in kale, chard, and spinach and squeezed some lemon juice on top and seasoned with sale and pepper.

Packed with healthiness and deliciousness! 😃
