I took a detour from the lemon glaze that I usually drizzle over my blueberry scones and did this batch with orange glaze instead. I also distributed the dough with an ice cream scoop directly onto my baking sheet to save time. The end result was delicious.

If you’ve got ripe bananas and you’re sick of banana bread, you have to try this grain free Chocolate Banana Cake with Dark Chocolate Ganache. It definitely raises the bar on deliciousness.

RECIPE:
Preheat the oven to 350°F and grease a 9 inch cake pan.
In a large mixing bowl SIFT together the following ingredients then set aside:
1&1/2 cups almond flour
2/3 cup cocoa powder
1 tsp baking powder
1/2 tsp baking soda
In a food processor process the following ingredients until smooth:
3 ripe bananas
1/2 cup melted butter
2/3 cup sugar
4 eggs
1 tsp vanilla
1/2 tsp cinnamon
Add the liquid ingredients to the dry ingredients bowl and mix until smooth then pour the batter into the prepared pan.
Bake in a preheated 350° oven for 35 minutes.
Cool for 5 minutes then invert the cake onto a serving dish and cool before glazing.
For the ganache, in a microwave safe bowl combine 3.5 oz Lindt 70% chopped dark chocolate bar with 3.5 oz heavy cream. Microwave in one minute then 30 second intervals stirring between intervals until smooth.
Allow both the ganache and cake to cool completely then pour the ganache over the cake.
Refrigerate without covering until the ganache sets then cover with plastic wrap until ready to serve.

Here are my best tips for making fluffy pancakes no matter what recipe you’re using. Make the batter a little bit on the thicker side so they won’t spread too much on the griddle. Cook them on lower heat so the pancakes have plenty of time to rise before they get too dark. Wait until the tiny bubbles rise to the top before flipping and you’ll have the perfect fluffy pancakes. The method works well with any recipe I’ve tried.

Marble Chocolate Banana Bread is a fun way to dress up a classic if you don’t have any nuts or chocolate chips to stir in. So Yummy!
RECIPE:
Beat together:
3 ripe mashed bananas
3/4 cup softened butter
2 eggs
3/4 cup brown sugar
1 tsp vanilla
Add:
2 cups gluten-free Bisquick and mix until combined.
Remove about half the batter and stir in 2 tablespoons of sifted cocoa.
Spoon both batters into a greased nonstick 9 x 5“ loaf pan alternating both types and slightly swirling them together. Bake in a preheated 350° oven for 55-60 minutes. Allow to cool on a wire rack for 5 to 10 minutes before removing from the pan to cool completely. ~~~~~~~~~~~~~~~~~~~~~

Loving this Mixto Salad from Red Hook in south philly. It’s grilled chicken, fresh mozzarella, and sundried tomatoes on a bed of mixed greens with a house made balsamic basil vinaigrette. They also have all kinds of unique sandwiches available on gluten free bread but if you want to keep it low carb nothing beats a good salad.

Hi guys. I thought it might be nice to share some of the recipes I've done on our community page since I haven't been able to make videos lately. I'm starting with one that's perfect for summer.
This Citrus Glazed Cake is a cross between Italy’s orange olive oil cake and Greece’s lemon yogurt cake. It’s made with healthier ingredients like Greek yogurt, olive oil, almond flour and fresh citrus. It’s easy to make and screams summer flavor. _________________
RECIPE:
Preheat the oven to 350°F and grease an 8 inch cake pan.
Sift together the dry ingredients and set aside:
125g flour(I used Bob’s Red Mill gluten free 1 to 1 flour)
75g almond flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
For the wet ingredients, in a large bowl whisk together:
3 eggs
150g white sugar
50g brown sugar
75g olive oil
200g Greek yogurt
Zest of both 1 lemon & 1 orange ( reserve about 1/4 of each zest for the glaze )
Add the dry ingredients to the wet and mix until smooth then pour into the prepared pan.
Bake in a preheated 350° oven for 40-45 minutes.
Cool for 5 minutes then invert the cake onto a serving dish. Cool before glazing .
For the glaze stir together, 1 cup of powdered sugar with about 1 tbsp each of lemon juice and orange juice along with the reserved 1/4 zest of each fruit. If the glaze is too thin, add more sugar if the glaze is too thick, add more juice. The cake must be completely cold before the glaze is applied or it will sink into the cake. Allow the glaze to dry before serving
