Why do most people fail at making sushi? Here are the 5 most common mistakes and how you can avoid them:
1️⃣ Mixing too much rice in a small hangiri (wooden tub)—for a 27 cm hangiri, mix only about 1 go (180 ml) of rice to ensure even seasoning. 1 go is a traditional Japanese measurement for rice, equivalent to 180 ml.
2️⃣ Pressing the knife when cutting sushi—crushes the roll or fish. Use a gentle slicing motion instead.
3️⃣ Not using vinegar water when wetting your hands—makes the sushi taste watery. Always use a little vinegar in your water.
4️⃣ Using too much rice for nigiri—throws off the balance. Less is more!
5️⃣ Storing leftover sushi rice in the fridge—makes it hard and less enjoyable. Keep it at room temperature.

In my last post, I shared the secret golden ratio of soy sauce and mirin—1:1—for achieving that perfect Japanese flavor. Today, let's dive deeper into traditional Japanese cuisine! Whether you're making Teriyaki, Udon Soup, or Nimono, this ratio is the key to unlocking authentic Japanese taste in your dishes. 🍜✨
Teriyaki chicken is a popular example, but if you're vegetarian, you can use this same ratio to make a delicious sauce for stir-frying vegetables! Try it with leeks, bell peppers, zucchini, or any of your favorite veggies.
Udon soup is incredibly easy to make. If you can find frozen udon noodles, I highly recommend using them for the best taste (I was able to find them in Vancouver, Canada). For cold udon soup, use a ratio of 1 part soy sauce, 1 part mirin, and 3 parts dashi. Since mirin contains alcohol, be sure to bring the mixture to a full boil.
Chikuzen-ni, which I mentioned as an example of a simmered dish, can easily include chicken, making it a well-balanced meal with plenty of nutrients. Of course, it's also delicious with just vegetables.
