Elderberries
Rosebuds
Garlic cloves
Ginger
Black pepper
Cinnamon
Citrus peels
Honey
Apple Cider Vinegar


1. Fill a pint jar one-quarter full with your chosen herbs.
2. Cover the herbs with equal parts apple cider vinegar and honey until the jar is full.
3. Stir well to mix thoroughly.
4. Wipe the rim clean and seal tightly with a plastic lid or parchment paper under a metal lid.
5. Shake the jar vigorously to combine the ingredients.
6. Store in a cool, dark place for two weeks, shaking twice weekly.
7. After two weeks, strain out herbs, retaining the liquid.
8. Transfer strained oxymel to glass jars or bottles.
9. Label and date each container.
10. Store in a cool, dark place for up to six months.
