Very nice system! It's a surprise not more people are doing this. I'd also setup a temp limit of the boiling flask/heating mantle as a safe measure and ensure better product consistency, but because they are vapors from boiling, the vapor temperature should be very close to the boiling content with a fast response time, at least in a classical distillation.

the results are in and i achieved near quantitative separation of the water and ethanol, the ethanol smells very pure while the remaining refuse in the flask smells rather malodorous so it even separated that well
that bent coil coupler on the motor ended up shearing though, might been work weakened, aluminum doesn't like being bent a bunch
