Only reason we need to stay in the curvature of the sun is so that we don't freeze to death. If the sun were to shut off we would freeze to death anyway. The gravity would not matter.

This is slightly misleading. We would continue in the same orbit for the same 8 minutes and only stop orbiting the moment we notice that the sun is gone. This means that we will start flying off into space before the planets further out than us. This is the same as gravitational waves, which are formed from colliding gravity wells. We don't detect those waves the second that the stars/black holes collide. They create a kind of ripple that we then detect them, depending on distance, many, many years later.
