I would not add the ginger that way. It has a more subtle taste if you cook the beans first with a few slices of ginger and then taking out the slices after you finish cooking them. The same goes for the orange peel, it does sound like a cool spin off, but originally you don't need it. You could, however, add dried tangerine peel whilst cooking the beans along with the ginger and remove it afterwards. Then you can mix the beans with some of the cooking liquid and then strain it to get out the bean peel. Adding dades is not needed since you use cane sugar to sweeten it. It is interesting you use coconut palm sugar, I've never had it or heard of it, but I'm sure it is a delicious combi since coconut goes well with red beans! We usually cook it with cane sugar and reduce the mixture. Then you can use the paste for any pastry! I hope these tips help :)
