During mango season (May through September), which we are now in the heart of, I like including diced ripe mango. During avocado season (January through March), I use diced avocado.

I made something really similar to this a few says ago to have with pulled pork. I used mint leaves instead of cilantro, and added some diced orange and orange juice, and some diced yellow bell pepper. The rest of the ingredients were the same, and it was delicious. I like switching things up. :)

It is so much easier and tastier! My recipe is nearly the same. I like pickled jalapeño instead of fresh and I add just a pinch of sugar. So good.

We also add a little bit of olive oil to make it healthier and fresh. Or mix with guacamole all together and yum!! Nicely done Lisa!! 😊

Never, ever but I'm Mexican-American, it goes without saying. Tip: cut some thinly chopped cabbage the way you would for coleslaw add more lemon or lime juce, and mix together. Chill in refrigerator for about an hour
you’ll end up with a delicious spicy and fresh coleslaw. Tip2: go to a local Carniceria or Mexican market and buy your fresh tortillas there. Much better quality. Bien Provecho.😊

I actually add a teensy bit of sugar and olive oil to my poco de gallo as well - makes a surprisingly big difference
