Spicy Hot Beef Stir Fry with Chili, Coriander, and Tender Stem Broccoli
Ingredients:
• For the beef:
• 1 pound flank steak or sirloin, thinly sliced
• 2 tablespoons cornstarch
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 2 tablespoons vegetable oil
• For the stir fry:
• 1 bunch tender stem broccoli
• 2 red bell peppers, thinly sliced
• 1 onion, thinly sliced
• 3 cloves garlic, minced
• 1 tablespoon fresh ginger, grated
• 2-3 red chillies, thinly sliced (adjust to taste)
• 1 bunch fresh coriander, chopped
• 2 green onions, sliced for garnish
• For the noodles:
• 1 package (14 oz) fresh or frozen udon noodles
• For the teriyaki sauce:
• 1/2 cup soy sauce
• 1/4 cup water
• 3 tablespoons brown sugar
• 1 tablespoon honey
• 2 tablespoons rice vinegar
• 1 tablespoon cornstarch (dissolved in 2 tablespoons water)
• 1 teaspoon sesame oil
• Extra Tabasco sauce (to taste)
Instructions:
1. Prepare the noodles:
1. Cook udon noodles according to package instructions. Drain and set aside.
2. Prepare the teriyaki sauce:
1. In a small saucepan, combine soy sauce, water, brown sugar, honey, and rice vinegar.
2. Bring the mixture to a boil over medium heat, then reduce to a simmer.
3. Stir in the cornstarch slurry and cook until the sauce thickens.
4. Remove from heat, stir in sesame oil, and add extra Tabasco sauce to taste. Set aside.
3. Prepare the beef:
1. In a bowl, toss the thinly sliced beef with cornstarch, salt, and black pepper until evenly coated.
2. Heat vegetable oil in a large skillet or wok over medium-high heat.
3. Add the beef to the skillet and stir fry until it’s crispy and browned, about 5-7 minutes. Remove and set aside.
4. Cook the stir fry:
1. In the same skillet, add a bit more oil if necessary.
2. Add the garlic, ginger, and red chillies. Sauté for about 1 minute.
3. Add the tender stem broccoli and bell peppers. Stir fry until the vegetables are tender-crisp, about 5-7 minutes.
4. Return the cooked beef to the skillet and add the udon noodles.
5. Combine and serve:
1. Pour the prepared teriyaki sauce over the beef, vegetables, and noodles, and toss to combine, ensuring everything is evenly coated.
2. Cook for an additional 2-3 minutes to heat through.
3. Serve immediately, garnished with fresh coriander and sliced green onions.
