2 cans of chickpeas
2 zucchinis
1/2 red pepper
1/2 yellow pepper
2 eggs
Salt, to taste
Black pepper, to taste
Turmeric (optional)
Italian herbs (optional)
200g breadcrumbs
200g pasta sauce
1 tbsp olive oil
1 tsp basil
100g olives
300g mozzarella
200g mild cheddar
Preparation:🔥🔥
Prepare the Veggie Base:👇
Drain and rinse the chickpeas from the cans. Wash the zucchinis and peppers.
Blend the chickpeas, zucchinis, and peppers together until smooth.
Add a pinch of turmeric, salt, black pepper, Italian herbs (if using), breadcrumbs, and the eggs. Mix everything well to form the base.
Bake the Base:🔥
Preheat your oven to 180°C (350°F).
Spread the mixture evenly on a baking tray to form the pizza base.
Bake the base for about 40 minutes, or until firm and golden.
Add Toppings:
Remove the tray from the oven and spread the pasta sauce over the baked base.
Season with salt, black pepper, basil, and drizzle with olive oil.
Top with olives, mozzarella, and cheddar. You can also add any other veggies you like.
Final Bake:🔥
Place the pizza back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
