If you pickpocket a drunken group in ac rogue they will have some interesting words being said like one being" I'll rip those chased hairs of if you don't give me my money" and it is always better if there is at least one women there as well

My favorite is in Brotherhood.
If you throw a claymore at someone, it will always land in thier face. Paired with the hilarious wind up animation, it's nothing short of perfection.

I'm not sure if this was mentioned in the games, but in the novel version – literally the first chapter of the Ezio trilogy in particular – river the brawl with the Pazzi took place is called Arno, sharing that name with the protagonist of AC Unity. There's probably better things I could think of but for some reason this was the most memorable for me.
