Lemon & Poppyseed mini loaves

1 and 3/4 cups all purpose flour
1 tsp baking powder
1 tsp baking soda 1/2 tsp salt
2 -3 tbsp poppy seeds
1/2 cup unsalted butter, softened to room temperature
1/2 cup granulated sugar
1/4 cup packed light or dark brown sugar
2 large eggs, at room temperature
1/2 cup plain yogurt, at room temperature
1 and 1/2 Tbsp fresh lemon zest
3 tbsp fresh lemon juice
1 and half tsp vanilla essence
1/4 cup milk
Method
1. preheat oven to 175C and grease a muffin or loaf pan and set aside.
2. In a large bowl, whisk the flour, baking powder, baking soda, salt, and poppy seeds together. Set aside.
3. Using an electric mixer, beat the butter, sugar, and brown sugar together on high speed until smooth and creamy. Scrape down the sides and bottom of the bowl as needed. Add the eggs, sour cream, vanilla extract, lemon zest, and lemon juice. Beat on medium speed for 1 minute, then turn up to high speed and beat until combined. Scrape down the sides and bottom of the bowl to get all the mixture together. The Mixture may look a little chunky and curded; that’s ok.
4. Fold in all the dry ingredients into the wet mixture ,add I milk and mix till well combined.
5. Spoon the batter evenly into greased pans
6. Bake for 20 mins or till a toothpick poked in comes out clean.
7. Allow the muffins to cook in the pan for 5 kins ,then remove and place on a wire rack
If you’d like to make icing you can mix together :
1 cup icing sugar
1 and half tsp lemon juice
1 tbsp milk
Mix till you get a nice smooth consistency
And drizzle over warm or cooled muffins
