One handed, Two-handed, and archery XP is earned by your weapons BASE damage. Not how much you are dealing. As in how much damage that weapon does with no perks, skills, or enchantments.
For one handed put a dagger in your left hand and a mace in your right and dual wield power attack for the most XP.
Two-Handed, get a great sword and swing.
Archery, just get your best bow, arrows and the perks that let you draw and shoot your bow faster. Zephyr would be great for this.

I don't bother with horses. They're stupid, get themselves killed and really aren't all that fast. Everywhere on foot. But thanks for the punching bag advice!

So, actually, if you go to the soul carin and talk to the distraught soul, he will ask you to collect arvak's soul. When you go to return his soul to the distraught soul, he will give a spell that lest you summon arvak in the over world. This means that you now have a completely free and semi immortal punching bag. When it dies, just re-summon arvak.
