90% Hydration Sourdough Ciabatta

Have fun making this high-hydration bread! I hope everyone is enjoying my video 😊

Recipe:

• Bread flour: 240g

• Whole wheat flour: 60g

• Salt: 6g

• Water: 270ml

• Leaven or Starter: 70g

Steps:

• Mix 210ml of water with all the flour and let it autolyse for 2 hours.

• Add the leaven or starter and mix well. Let it rest for 30 minutes.

• Add the salt and gradually add the remaining 60ml of water, ensuring the flour absorbs it. Mix well, then slap the dough for 5 to 10 minutes to build gluten. Let it rest for 40 minutes.

• Perform coil and fold every 40 minutes, repeating this 4 times.

• Refrigerate the dough overnight.

• The next day, take the dough out of the refrigerator, dust some flour on the dough and the table, tip it out, and fold it again.

• Divide the dough into 3 pieces.

• Let it rest at room temperature for 1 to 2 hours.

• Bake at 250°C for 15 minutes with steam, then reduce the temperature to 230°C and bake for another 15 minutes without steam
