One of my methods for this is to duplicate the model or save it as a different file, then there is a modifier to lower the poly count, and then use retopoflow to create a low poly mesh. Skeletons are a bit harder since they have a lot of crevices. And in that instance maybe some simple geometry with subdivison may help. Good luck looks really good

Don’t take any offense to this but I think you could achieve the same results if not better if you would approach the skeleton part at least with a hard surface modeling way and you optimize your topology or you can just use primitive shapes such as a cylinder that are placed them over the model and do it that way then use a subdivision modifier if you want but for the bones at least I don’t believe it to be necessary this is just my own advice as for the I’d start with a plane and use the same method I described above oh and you could always have the subdivision modifier on but not applied so you know what your results would look like before you apply it as your modeling
