INGREDIENTS FOR THE MEATBALLS
1 kg mixed ground pork and beef
1 onion
2 cloves of garlic
1/2 bunch of parsley
1/3 bunch of mint
1 egg
100 g bread
2 tablespoons olive oil
1 teaspoon oregano
salt and pepper
1 teaspoon wine vinegar
50 ml soda
FOR THE POTATOES
1 1/2 kg potatoes
2 cloves of garlic
1 chicken cube
4 sprigs of fresh thyme
1/2 teaspoon oregano
2 teaspoons mild mustard
Juice of 2 lemons
50 ml olive oil
salt and pepper
METHOD
1. In a pan, sauté the onion and garlic for two minutes over low heat until they become translucent. Then, in the bowl with the ground meat, add the onion and garlic along with the rest of the ingredients for the meatballs. Mix well and let the meat absorb all the aromas for a while.
2. In a blender, add the garlic, thyme, mustard, lemon juice, oil, chicken cube, oregano, and blend well until it becomes a cream.
3. In a pan, add a little oil and sauté the potatoes for 5 minutes, stirring occasionally.
4. Place the potatoes in a baking dish and pour the lemon sauce over them, mixing well. Finally, shape the meatballs to your preferred size, place them on top of the potatoes, and bake in the oven at 190 degrees Celsius for about 45 minutes, depending on the oven; it may take more or less time.
