I dont know how much you can get out of Hyouka, but Hai to Gensou no Grimgar def. deserves more. (tho I'd REALLY love more of Hyouka too.
Vinland Saga and Jujutsu Kaisen should show more soonish. (next year mabye?)

Barakamon is the only manga that made me collect all the volumes. It definitely deserves another season with all the content left out the first season and the rest of the volumes since it's now completed.
