The Hessians weren't stupid. While i don't know all of the details of the battle, I can understand the mindset of not wanting to lay down your life for a cause you didn't have any skin in other than a paycheck. Mercenaries are typically quick to surrender when faced with the prospects of fighting & dying or surrendering & surviving.
