Whoah, thanks for the demonstration! It's amazing how organic materials can rebound with fixing their hydration level. Complex carbs and especially proteins are often like a spring. They will wilt over time but can be pumped back up. Okay that's nice to know in theory, but I was impressed with how effective this simple technique worked. Practical knowlege for the win!
