Ingredients:
150 grams almond flour
40 grams cocoa powder (unsweetened)
3 grams baking powder
1.5 grams baking soda
1.5 grams salt
3 large eggs
75 grams melted coconut oil or butter
80 grams unsweetened almond milk (or any milk of your choice)
70 grams sugar-free sweetener (such as erythritol or stevia)
3 grams vanilla extract
Instructions:
Preheat your oven to 350°F (175°C). Grease a 17.78 cm (7-inch) round cake pan or baking dish with coconut oil or line it with parchment paper.
In a mixing bowl, combine the almond flour, cocoa powder, baking powder, baking soda, and salt. Mix well to combine.
In another bowl, whisk together the eggs, melted coconut oil or butter, almond milk, sugar-free sweetener, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.
Pour the batter into the prepared cake pan and spread it evenly.
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
Once cooled, you can garnish the top of the cake with melted dark chocolate
Garnish Instructions:
Melt dark chocolate and drizzle it over the cooled cake using a spoon.
Arrange sliced strawberries, blueberries, raspberries, and fresh mint leaves on top of the melted chocolate for a colorful and flavorful garnish.
Allow the chocolate to set before slicing and serving the cake.
