I know alot of people have already said he would need to write down Kakarot. But I can't say definitively, but Light would write down peoples name's in the language that the name comes from, and needs the correct spelling as seen as when he writes down the name of the guy in the store like 5 times with all the possible spellings. As Kakarot is a Sayian name, Light would need to know Sayian script to write it down. And we don't even know if Sayians use a written language or just adopted whatever Freeza uses (which is also an alien script).

Also Light would never know his name. Sure he could introduce himself as Goku, but it wouldn't work. As Kakarot is his true name and he does go by it. He's accepted that since Vegeta was around.

The Death Note's human rule is likely just cause in the story nothing exists outside of humans and the shinigami, in a hypothetical crossover it would accomidate aliens too I think.
Especially since I've seen "human" being a stand in for "mortal" in a lot of translations
