🌱🌱🌱Moong Sprouts & Sweet Chili Tofu Recipe 🔥~ Super Healthy and Delicious Lunch

Ingredients:🤩🤩🤩

100g moong (whole green gram)
1 onion, finely chopped
2 tbsp sunflower oil
Juice of 3 tomatoes
150g mixed vegetables (peas, carrots, green beans, corn)
1 red bell pepper, chopped
200g organic sweet chili tofu, cubed
1/2 tsp turmeric powder
1/2 tsp chili powder
1/2 tsp cumin powder
1 tsp soy sauce
Instructions:

Prepare Moong Sprouts:🔥🔥🔥
Wash 100g moong thoroughly and soak it in water for a few hours or overnight.
Drain the water and transfer the moong to a strainer or bowl, allowing it to sprout.
Cooking Process:
Heat 2 tbsp of sunflower oil in a pan over medium heat.
Add finely chopped onion and sauté until it turns golden brown.
Prepare Tofu:
While the onion is frying, cut 200g of sweet chili tofu into bite-sized cubes.
Add Tomato Juice:
Pour the juice of 3 tomatoes over the fried onions. Cook for 2 minutes.
Spice it Up:
Add 1/2 tsp turmeric powder, 1/2 tsp chili powder, and 1/2 tsp cumin powder to the pan. Stir well to combine with the onions and tomato juice.
Vegetables and Red Pepper:
Season with a pinch of salt and add 150g of mixed vegetables (peas, carrots, green beans, corn) along with chopped red bell pepper. Mix everything together.
Moong Sprouts and Cooking:
Add 50ml of water to the pan followed by the prepared moong sprouts. Allow the mixture to boil for about 7 minutes, ensuring the vegetables are tender and flavors blend well.
Finish with Tofu and Soy Sauce:
Finally, add the cubed sweet chili tofu and 1 tsp of soy sauce. Gently mix all ingredients together, ensuring the tofu is coated with the flavorful sauce.
Serve and Enjoy:
Transfer the Moong Sprouts & Sweet Chili Tofu to a serving dish. Garnish with fresh herbs if desired and serve hot as a nutritious lunch option.
