I'm very fond of the compassionate version of it: potatoes, bacon and cabbage, without the bacon.
With plenty of pepper and strong, spicy (for example Colman's) mustard on it, both versions taste very similar.
By the way, if you want to cheat, feel free to come over to Spain, where bacon and cabbage are still legal.
