Ingredients:
1 whole chicken, cleaned
3 tablespoons mayonnaise
2 teaspoons each: salt, sweet paprika, garlic powder, curry powder, Italian seasoning
Vegetable oil for frying
Fresh parsley, chopped (to taste)
3 garlic cloves, grated
3 tablespoons tomato paste
1 teaspoon salt
Pinch black pepper
40 milliliters (1.4 fluid ounces) water
Instructions:
Prep the Chicken: Pat the cleaned chicken dry and split it in half lengthwise. Using a rolling pin, gently smash the chicken to break down the bones without flattening it completely.
Make the Marinade: In a bowl, whisk together the mayonnaise, salt, paprika, garlic powder, curry powder, and Italian seasoning.
Marinate the Chicken: Brush the chicken generously with the marinade, ensuring it coats the entire surface. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
Fry the Chicken: Heat enough vegetable oil in a large skillet over medium heat to reach 350Β°F (175Β°C). Carefully add the chicken pieces and fry for 5 minutes per side, or until golden brown.
Bake to Finish: Transfer the browned chicken to a preheated oven at 400Β°F (200Β°C). Bake for 40 minutes, or until the internal temperature reaches 165Β°F (74Β°C) in the thickest part.
Make the Sauce (While Baking): Combine chopped parsley, grated garlic, tomato paste, salt, pepper, and water in a small bowl.
Serve and Enjoy! Remove the chicken from the oven and let it rest for 5 minutes before serving. Drizzle with the prepared parsley garlic sauce and enjoy!
Tips:
