Ingredients (Serves 1) -
3 tbsp diced onions

1 cup (250ml) unsalted dashi / chicken stock

Garnish:
2 tbsp chopped spring onions / scallions (optional)
1. Add some oil to a pot and brown the onions
2. Add minced meat and cook until it is slightly brown
3. Once meat is cooked, add in dashi or chicken stock. Bring it to a gentle boil.
4. Add in curry roux and stir gently to melt the roux completely.
5. Check consistently of curry, whether is it to your liking. If too thick, add a little water or continue to reduce if it’s too watery.
6. Add in udon. If you are using frozen udon, you may need to add and cook the udon first with the broth before adding the curry roux.
7. Separate the udon noodles and add in vegetables to cook for an additional minute.
8. Taste the curry broth and season with soy sauce if needed. Garnish with spring onions.
