In the last 20 years there has been an explosion in the number of individuals reporting gluten sensitivity and symptoms when eating gluten. Two genes, HLA-DQ8 and HLA DQ-2, have been associated with gluten intolerance however many people have these genetic markers and handle gluten just fine. What accounts for the difference?
