Ice will cool down your drink in two ways. The first is that since it is cold, it takes some of the energy from the drink to warm it up (same as whiskey stones). The second (and much more important) way is that the phase change from solid to liquid takes a lot of energy on top of just the temperature change. This is why whiskey chillers that contain some sort of liquid work so well.

I like my whiskey, bourbon particularly, on the rocks. I have a younger pallet and I enjoy the initial burn, but like it to take the âheatâ off through the drink. My choice is a 2x2 single ice cube.
Donât let someone say whatâs better, experiment and drink what you enjoy. Try things over again because your palate will change.

a few things to point out: the latent heat of the phase change from the ice gives a big advantage as it melts. as for comparing to the stainless steel, we could do a Joules per unit volume calculation. plus the melting ice will change the flavor of the whiskey as it melts so your drink can evolve as you sip it if that's what you're into
