How to Make Pumpkin Pie with Homemade Shortcrust Pastry
In this video, I’ll show you how to make a delicious pumpkin pie from scratch, including the crust and filling. The crust is made with a simple shortcrust pastry recipe, and the filling is rich and creamy with homemade pumpkin puree and warm spices. Follow along to make your own perfect pumpkin pie!
Ingredients for the shortcrust pastry (for a 24 cm tart pan):
• 80g granulated sugar
• 160g unsalted butter
• 225g all-purpose flour
• ½ egg
• Pinch of salt
Instructions for the pastry:
1. Mix all the ingredients in a bowl and knead into a firm dough.
2. Wrap the dough in plastic wrap and chill in the fridge for at least 1 hour.
3. Roll out the dough to about 5mm thick and line your greased tart pan with it. Trim the edges but leave a little extra to account for shrinking.
4. Line the dough with parchment paper and fill with pie weights or dried beans.
5. Bake at 180°C (356°F) for 20 minutes. Remove the weights and paper, and bake for another 10 minutes.
Ingredients for the filling:
• 500g pumpkin puree
• 175g light brown sugar
• 250ml heavy cream
• 150ml milk (whole or semi-skimmed)
• 2 medium eggs
• 1 tbsp pumpkin spice mix
Instructions for the filling:
1. In a bowl, whisk together the pumpkin puree, sugar, cream, milk, eggs, and pumpkin spice until smooth.
2. Pour the filling into the pre-baked crust.
3. Bake at 160°C (320°F) for about 45 minutes, until the center is slightly jiggly.
4. Let the pie cool completely or refrigerate for a few hours before slicing. Serve with whipped cream!
