Adiyogi means the first yogi who transmitted the science of yoga to us. It doesn't mean, he has a beginning or end. It only means the first guru (Adiguru). Shiva is swayambho ,means no beginning no end ,its there always. Adiguru and adiyogi are also words even seen in mantras that are created thousands of years before. That means these words are not from this generation , these words are used thousands of years before also.

Yes, Shiva has no beginning and no end. However, Adiyogi is not denying that. Adiyogic refers to the first Yogi who transmitted the science of Yoga to the 7 Rishis and thus to humanity, and it is Shiva who did that. Hence, Shiva is Adiyogi.
