Commercial burgers which usually come in frozen, use cheaper cuts of meat and are more likely to contain dangerous bacteria. Be glad they are served well done...its the reason they don't food poison you. Homemade ones, where you ground the meat yourself, could be served rare, but even high quality 'in house' made burgers from restaurants in Ireland won't serve you a burger less cooked than medium. To do so could leave them open to charges of negligence, if you were food poisoned.

You couldn't be more wrong about burgers and how they shouldn't be well done. Burgers are not streaks. You can get a streak done rare because bacteria can not penentrate it. But as a burger is made from mince bacteria can and does penentrate it so to make sure you kill this bacteria you must cook them well done. The exception is if the chef minces the meat at the moment of cooking, as they do with steak tartar. But they're not doing that.
