Here’s a lazy one-pot rice cooker recipe that’s super cheap and simple to make using Chinese sausage (or Lap Cheong) that I was suprised to find in bulk at Costco. I’d almost forgotten this ingredient existed because the last time I’ve had Chinese sausage was in college, so it’s a nice to revive a taste of my childhood again with this simple rice cooker recipe.
It’s a perfect meal when you’ve got leftover veggies sitting in your fridge OR if you’re looking for a simple dinner that will also give you a tons of extra meals for the week.
You can really use any veggies or other ingredients you’d like but here’s what I worked with:
4 Chinese sausage, sliced
~5 shiitake mushrooms, diced
~4 inches carrots, diced
4 green onions
1/2 cup of corn
Sauce:
soy sauce, 3 tblsp
dark soy sauce, 1 tblsp
rice vinegar, 1 tblsp
cane sugar, 2 tblsp
sesame oil, 1 tsp
chicken powder / chicken bouillon / msg, 1 tsp
3 garlic, grated
1/2 inch ginger, grated
No complicated steps here. Just prepare your ingredients and sauce. WASH and prepare your rice like you normally would. Throw in all the ingredients, and then drizzle in the sauce before turning on your rice cooker.
