A perfect salad for summer.
This recipe is really easy
Apart from soaking piegon peas and cooking it the salad can be made in a jiffy.
It is a very nutritious and a filling salad
Ingredients needed to make this salad
1/2 cup white piegon peas washed and soaked for 6-8 hours
1/2 cup tomato chopped
1/4 cup onion chopped
1/4 cup raw mango chopped
1/2 cup sweet corn kernels cooked
1/4 cup pomegranate arils
For the dressing
1/4 cup mint leaves
1/4 cup coriander leaves
1 green chilli(add depending on spice tolerance)
1/4 cup roasted cashew nuts
Salt to taste
1 tbsp lime juice
Method
Pressure cook the soaked white piegon peas for 2 whistles. The peas should be intact but cooked. Strain the peas.We can use the cooked water to make rasam so we don't discard.
Grind everything mentioned in dressing with 1 tbsp water into a smooth paste.
Chop all the veggies into bite sized pieces.
In a bowl add the peas and all the other vegetables and fruit.
Add the prepared dressing and mix well.
A delicious and healthy salad is ready to be served.
Aps Notes:
You can replace this piegon peas with any peas or pulses of your choice with the same recipe.
You can add chopped cucumber to this I didn't have it today so have skipped it.
