Tablet series - Episode 5

If you are looking for a Scottish twist on your cheesecake then this is for you! The tablet is in the base for sweetness and then crumbled over the top, complementing the crowdie cheese filling. You can find the recipe for Crowdie and tablet in my reels on my profile page. If you don’t fancy making the Crowdie, you can use shop bought cream cheese instead!

Serves 8 generously (8”/20cm diameter springform tin)
Base:
200g Rolled oats
120g chopped tablet
120g melted butter
1 tsp flaky salt

Filling:
500g Crowdie or cream cheese
200ml sour cream
2 tbsp oat flour (I just blitzed some rolled oats)
3 large eggs
100g caster sugar
100g soft brown sugar
1 tsp vanilla paste/extract

Chopped tablet and either caramelised white chocolate or white chocolate to decorate.

For the base, toast the oats in the oven at 180c till golden all over. Leave to cool then blitz to crumbs in a food processor. Add the chopped tablet, salt and melted butter and blitz again to combine. Press into the base of your buttered, lined springform tin.

For the filling, in a stand mixer, mix your crowdie and sour cream till smooth, add the vanilla and sugars and mix again. Add eggs one by one till incorporated then mix in the oat flour.

Grab a larger baking tray, lay foil into it, then your cheesecake tin, wrapping the foil up the edges. Pour in your batter then pour a kettle full of boiling water into the tray surrounding it. Place carefully in a hot oven at 160c for about an hour. Turn the oven off, open the oven door and leave ajar till the cheesecake has cooled. Remove from the tin and cut into 8 wedges.
I caramelised some white chocolate in the microwave, then in a piping bag drizzled it over each slice, topping with crumbled tablet. Absolutely delicious.
