Makes 3 wraps

Crispy Tofu:
300g firm tofu
1/4 cup plain flour
1/4 cup + 1 tbsp water
Pinch of salt, pepper and oregano or chilli flakes
1/2 cup panko bread crumbs
1/4 cup soy protein crisps (optional)
Enough cooking oil to shallow fry

Other:
Large wraps of your choice
Cherry tomatoes, halved
Lettuce, chopped
Red onion, sliced
Avocado, sliced
Sweet chilli sauce

Firmly press the tofu to remove any water and slice into 1 cm thick rectangle strips and set aside.

In a shallow bowl combine the flour, water, salt, oregano and pepper, and in a separate bowl add the bread crumbs and crisps.

Dip the tofu into the batter and drip any excess off, then toss it in the panko crumbs and place on a plate.

Place a frypan over medium heat and add enough cooking oil to cook a half side of the tofu. Once the oil is hot add in the tofu pieces and cook until lightly golden on each side. Once ready set aside onto a paper towel to remove any excess oil.

In the meantime prepare your salad ingredients. Heat the wraps in a pan or microwave to soften. Add the avocado, lettuce, tomato, onion, tofu and sweet chilli sauce and fold it up.

If you like, place the wrap in a pan over high heat for 1 minute each side to lightly toast. Enjoy
