Heres the thing, she knew by the exclamation 'so this is piercing blood' that choso had piercing blood. I mean for fucks sake he was literally on her side of the battle before Shibuya. She knew the technique and still couldn't fully dodge of block it unlike lets say kenjaku for example.
The ino example doesn't work since again as we all know Sukuna was just being goofy and playing around with the sorcerers, he was the furtherest thing from in guard. Uraume on the other hand was on guard and prepared to take choso out as fast as possible and still nearly gets Blitzed

The naoya example is also kinda strange considering he continues to blitz choso, the only reason choso catchs him is due to flowing red scale. He even blitzes maki for a minute in perfect preparation, she only tags him due to her understanding and predicting the technique. Meaning at least in terms of movement speed he was faster than her yuji and choso. He just didn't have the AP to put the hands on them sufficiently.
Its the same case with uraume, she almost got bllized by piercing blood why it barely damages her, what damage it does do gets healed instantly unless you don't count the posion.
Ryu example is also a bad one since he genuinely tanks dismantle and Sukuna has to try extra hard to blitz him and bybass ryu's super durability with cleave
