1. That one is correct. The shape is similar to a rotor blade and thus have different properties when spun.
2. Also correct. The acid of the lemon Juice transforms the dye into another, colorless form. That's how indicators work.
3. That is the fake, obviously. I could guess that the hole in the spinning magnet could cause so kind of suction, but that wouldn't blow out the flame.

A piece of plastic could be designed to do that, changing the acidity of something can change many dyes colors, I can think of no compelling reason a rotating magnet should impact a flame.

I have seen those rattlers before, I assumed it was the moving air from the spinning disk (and not the magnetism) that extinguished the flame. Not so sure about the lemon, but with 2 true one fake i was pretty clear.
I suppose lemon juice works for some inks, but not all of them.

The first one is a rattleback which is a cool physics toy.
The second one is because lemon juice is a good solvent and the highlighter ink is a solute.
The third one is fake but still cool since a flame is often made of charged ions which can be affected by a magnet.
