I can't remember if I asked you this but I bought 3 bannetons of different sizes but never really baked bread using them after failing once. How do you figure out what size/ weight of a dough goes to a certain banneton? I could certainly eyeball it and figure out through trial and error but is there a way to figure it out? Like maybe a take the measurements of the banneton and it might have a certain weight of a dough that it can hold so I can use bakers percentages just right to get that specific final weight?

After watching these videos and cooking some sad loaves, it seems like my dough is always much much wetter than in these videos, and it never reaches a consistency even close to what I see here, just flat and wet.
