Fried Potatoes 🤎
600g potatoes
1 large onion
2 spring onions
200g Mushroom of your choice
Sausages
Potato seasoning or just salt
Recommend:
Smoked salt
1. Slice potatoes in 5mm thickness. Put it into cold water to soak.
2. Chop the onions lengthwise and dice the mushroom into cubes.
3. Heat up a large pan with no oil (this works best in cast iron, it won't be as crispy in a non-stick but still tasty). Fry the mushroom pieces until they start to release the water and shrink. Once they no longer release any steam, pour in 1 tbsp of oil and smoked salt (or regular salt). Fry until crispy or browned. Set aside.
4. Fry sausages but with a little bit of oil and set aside as well.
5. Drain your potatoes and pour it in a pan with an additional 2 tbsp of oil on high heat. Cover with a lid and fry for 5 minutes. Repeat it twice mixing potatoes in between.
6. Put in the onions over the potatoes and cover for another 10 minutes. After this time, keep mixing until the onions are fully cooked and the potatoes have a golden brown colour. Mix in your seasonings.
7. Sprinkle the mushroom pieces, spring onion greens, sausages and enjoy

I'm German, yet not the biggest fan of potatoes, I'd choose noodles and rice over them in most cases, but I can get behind fried potatoes and chips/fries.
The way you made them in this video reminds me of the fried potatoes my grandma used to make, it's one of the yummiest things from her I remember.

Fun Fact: Potatoes are God's biggest culinary gift to man, almost a wonder-crop tbh. Literally almost singlehandedly got rid of the European famine once it was discovered in the Americas and brought to Europe. It's 10/10 because it doesn't need a ton of nutrients to thrive while being filled with enough carbs and micro-nutrients to sustain a person on its own.
