Berry slump consists of a berry base with a topping that is a cross between a dumpling and a biscuit. You can use any type of fresh or frozen berries. Serve warm with ice cream or whipped cream.
Ingredients:
4 cups fresh or frozen berries (thawed)
Ā¾ cup sugar
1 cup flour
1Ā½ tsp baking powder
Ā¼ tsp salt
ā cup milk
1 egg, lightly beaten
1 tsp vanilla extract
50g (1.8oz) butter, melted
Method:
ā¢ Preheat oven to 180Ā°C (350Ā°F) and grease a 6-cup capacity ovenproof dish.
ā¢ Tip the berries into the dish and sprinkle over Ā½ a cup of the sugar.
ā¢ Sift the flour, baking powder, salt and the remaining Ā¼ cup of sugar into a bowl.
ā¢ Add the milk, egg, vanilla and butter and mix until well combined.
ā¢ Pour the mixture over the berries (it doesnāt matter if the mixture doesnāt cover all the berries).
ā¢ Bake for 35ā40 minutes or until golden and bubbling.
Serves: 6
Prep Time: 10 minutes
Cooking Time: 35-40 minutes
