Grandma Sally's Famous Orange Rolls
3 eggs
1/2 cup oil, or butter, melted
Scant 1/2 cup sugar
3/4 t. salt
1 cup water or milk, warmed (I've always used just water).
2 T. yeast dissolved in 1/4 c. warm water
Mix all and add about 5 1/2 cups of flour. I use the dough hook of my Kitchen Aid mixer.
Dough should be slightly sticky. Let rise until double in size. Punch down and make into roll shapes of your choice. My favorite way is crescent shapes. Pinch off a chunk, about the size of a grapefruit. Roll into a circle and spread with softened butter. Using a pizza cutter or bench scraper, cut through the circle into about 8 pizza shapes. Starting at the long end, roll up and give a little pinch to the point. Curve the roll and lay point side down on parchment paper or greased cookie sheet. Let rise again until double.
Bake @ 375°F for 12 to 15 minutes.
If you want to make orange rolls, mix 1/2 cup of sugar with 6 T. softened butter and grated rind of one orange. Spread on the dough instead of just plain butter. You can omit this step altogether if you don't want extra calories and fat.
