I just made this recipe yesterday. The inside is moist so it definitely needs to be toasted. It looks like pound cake; tastes a bit like cottage cheese, where it is wet. I always toast mine so that takes care of the wet inside. I’m always amazed that the pork rind crumbs give it a bread like texture. I am ketovore(carnivore with some veggies). I eat low carb to keep my blood sugar down. After eating this bread, my numbers are always under 120. Sometimes a girl needs to eat bread 🤷🏻

WRITTEN RECIPE:
12 eggs
1.5 cups cottage cheese
2 cups pork panko
1/2 cup (1 stick) salted butter, melted
Blend everything together (I use a food processor).
Pour into a non stick 9 by 5 loaf pan (or use parchment paper for easy cleanup).
Bake at 375 for 60 minutes or until a toothpick comes out clean. Let cool before slicing.
Slice into 22 (1/2-inch) slices and toast before using. I like to air fry my slices at 400' for 10 min, flipping halfway.
