If you want to make coconut candy take a coconut remove the Flash and grade it fine remember when you are opening the coconut to save the water in the coconut and then you add the liquid to a pan your sugar and then your coconut and just a little bit of butter you stir it did caramelizes and then you put it on a non-stick surface spread it out and wait for it to harden do you have the most incredible coconut candy you've ever eaten this was taught to me by Madeleine Ripley of Eleuthera Bahamas may she rest in peace what an incredible stepmom she was

Those who don't t have airfryer. .simply break coconut ,cut the flesh into slivers after peeling off the blackish hard layer.Sundry the pieces for a day or two. Make jaggery syrup and pour overthe slivers covering all pieces and let it cool in shade before storing.
