Ingredients:
2 cups rice flour (preferably puttu flour)
1/2 cup grated coconut
Water (as needed)
Salt (to taste)
Instructions:
1. Prepare the flour: In a bowl, add the rice flour and salt. Gradually sprinkle water over the flour, mixing it in until the flour resembles breadcrumbs. You want the flour to be moist but not wet.
2. Steam the Puttu: Fill a Puttu maker with layers of the moistened rice flour and grated coconut. Alternate between the two, starting and ending with coconut.
3. Cook: Place the Puttu maker over a steamer or a pot of boiling water. Steam for 10-15 minutes until cooked. Once done, remove the Puttu from the maker and serve it hot.
Kadala Curry (Black Chickpea Curry) Recipe:
Ingredients:
1 cup black chickpeas (Kadala), soaked overnight
1 medium onion, chopped
2 tomatoes, chopped
1-2 green chilies, slit
1-inch ginger, chopped
3-4 garlic cloves, chopped
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala
2 tbsp coconut oil
1/2 cup grated coconut
Salt to taste
Water as needed
Fresh coriander leaves (for garnish)
Instructions:
1. Cook the chickpeas: Drain the soaked chickpeas. In a pressure cooker, add the chickpeas with enough water and cook for about 3-4 whistles or until they are soft and tender.
2. Prepare the curry masala: Heat coconut oil in a pan. Add chopped onions and sauté until they turn golden brown. Add ginger, garlic, and green chilies, and sauté for a few more minutes.
3. Add tomatoes and spices: Add chopped tomatoes, turmeric, coriander, cumin powder, and salt. Cook until the tomatoes turn soft and oil starts to separate from the masala.
4. Grind coconut paste: Grind the grated coconut with a little water to make a smooth paste.
5. Combine: Add the cooked chickpeas to the pan with the masala. Mix well and add water as needed to adjust the curry consistency. Let it simmer for 10-15 minutes for the flavors to blend.
6. Finish the curry: Stir in garam masala and coconut paste. Cook for another 5 minutes, then garnish with fresh coriander leaves.
7. Serve: Serve hot with Puttu for an authentic Kerala breakfast!
