I dont think they should replace it. Even in the new deadpool movie there is a Stan Lee cameo and I think it was great! Removing it or changing it for the guy you talked about would be awful as it would undermine his memory and its a bit that is always fun to see. To prove my point that this will not phase out, this is an explanation of the cameo in deadpool & Wolverine (teeny tiny spoilers)
In the scene where all the deadpools fight, on the bus they pass through there is an ad for some business with Stan Lee on it.
So if there is one in a movie this recent, it should and most likely will stay.

The Stan Lee cameos were done in honor of his contributions to the franchise, not as a running gag. With his passing, it's best left alone in reverence rather then being replaced with fan service for the sake of fan service.
Dead Pool isn't even a Stan Lee character.
