🎄🏴󠁧󠁢󠁳󠁣󠁴󠁿 SCOTTISH ROCKY ROAD 🏴󠁧󠁢󠁳󠁣󠁴󠁿🎄

I had to make this for Christmas. Tunnocks caramel wafers and tea cakes were made for this, and along with some of my Christmas shortbread, it couldn’t be better! I like a jelly in my rocky road so I experimented with some Irn bru! I need to get a stronger flavour, but the texture worked brilliantly- not bad for a first effort! A packet of shop bought jellies will do the job tho! 🙌🏼🙌🏼

Makes 15 squares

Irn bru jellies
4 x cans into a pan and reduce by half. Add a tbsp glucose syrup, dissolve then leave to cool. Measure out 625g liquid and sprinkle over 125g gold grade powdered gelatine. Leave to bloom then transfer back to pan and warm gently till all dissolved. Do not let it boil. Using a turkey baster, fill silicone moulds and leave to set. This makes LOADS!!

Chop up 4 Tunnocks caramel wafers, 6 shortbread biscuits & 8 Tunnocks tea cakes.
Melt 500g chocolate with two tbsp coconut oil (I used 360g milk and 140g dark). Stir through all your biscuits and jellies and pour into a lined tin (20 x 26cm). Pop in fridge to set.
Melt 80g white chocolate, pour into a piping bag and drizzle over the top. Let that set then cut into squares!

So sweet, but so good 😊
