They should allow those games to be unlocked off-line or with friends or automatically unlock the achievements the moment the server closes down

Awe man, sad day. I didn't realize the servers had turned off, this is legitimately the best car combat game I've ever played & my favorite racing game is the PS4 generation.
Glad I got the platinum trophy when I did, but sorry you can't get 100%.

I was planning to for a playthrough of the entire NFS series, starting with Most Wanted '05, and you can't get multiplayer achievements for the games after due to server closures in 2021

don't forget how I can't get every achievement in most forza games because some require you to be in the multiplayer servers to get them, and the servers shut down
