Plantain Waffle!!

This recipe blew my mind. I wasn’t expecting plantain to waffle this well but it did! 🤷🏾‍♂️ the plantain itself wasn’t overly ripe so it wasn’t to sweet which is why I added a drizzle of warm honey and a touch of whipped butter to make it feel and look like a typical waffle. I highly recommend this technique to all my plantain lovers who haven’t tried this yet. Save this recipe and try it for yourself!! Makes two large waffles
Ingredients;
3 fairly ripe plantains (not over ripe or it may be too sweet or burn to the waffle iron)

Optional;
Two tablespoons warm honey
1 tablespoon room temperature butter or sub for plant butter

Method;
Slice your plantains into 3 then peel off the skin. Fill a large cast iron pan with 1 inch of vegetable and heat on medium heat. Once oil is hot carefully add plantain. Once golden brown on all sides remove and drain from oil. Heat up your waffle iron and brush with vegetable oil. Add 4-5 pieces of plantain to the waffle iron then slowly close. Be careful as there will be steam shooting out the sides. Close and cook for approximately 5 minutes. Carefully remove from waffle iron and allow to cool for 2 minute before serving. Enjo
