Worth to add that not playing the third allows him to sing the major third from the overtone series instead of the slightly higher pitched major third from equal temperament. If you listen closely his sung third is slightly lower pitched than the one he shows on the guitar, making the chord more in tune than if he played the third. Pretty cool!

Nice. The blend of complementary chord tones is bigger than the sum of its parts. This light and airy mix is almost the antithesis of Phil Spector's "Wall of Sound".
The idea can be further applied to all instruments playing an arrangement: The more that each instrument plays in it's own sonic space - whether through different octave, complimentary chord voicings or rythmic embellishment - the richer and cleaner the resultant music.
